Libyan Style Chicken and Rice Casserole (Djaj Bil-Ruz)

Ingredients
- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the chicken pieces with salt, pepper, turmeric, and cumin.
- Heat the olive oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the diced tomatoes, tomato paste, and cinnamon to the pot. Cook for a few minutes, stirring occasionally.
- Return the browned chicken pieces to the pot. Add the basmati rice and chicken broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-35 minutes, or until the rice is cooked and the chicken is tender.
- Once done, let the casserole rest for 5 minutes before serving.
