Libyan Style Chicken and Rice Casserole (Djaj Bil-Ruz)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Season the chicken pieces with salt, pepper, turmeric, and cumin.
  2. Heat the olive oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  4. Add the diced tomatoes, tomato paste, and cinnamon to the pot. Cook for a few minutes, stirring occasionally.
  5. Return the browned chicken pieces to the pot. Add the basmati rice and chicken broth. Season with salt and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-35 minutes, or until the rice is cooked and the chicken is tender.
  7. Once done, let the casserole rest for 5 minutes before serving.
