Libyan Style Chicken Curry (Djaj Bil-Qurma)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic and cook for another minute.
  3. Add the chicken pieces to the pot and brown them on all sides.
  4. Stir in the diced tomatoes, tomato paste, and all the spices. Cook for a few minutes to release the flavors.
  5. Pour in the chicken broth, bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the chicken is cooked through.
  6. Adjust the seasoning if needed and garnish with fresh cilantro before serving.
