Libyan Style Chicken Curry (Djaj Bil-Qurma)
Djaj Bil-Qurma is a traditional Libyan chicken curry that is rich in flavor and spices. This dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 cups chicken broth
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic and cook for another minute.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the diced tomatoes, tomato paste, and all the spices. Cook for a few minutes to release the flavors.
- Pour in the chicken broth, bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the chicken is cooked through.
- Adjust the seasoning if needed and garnish with fresh cilantro before serving.
