Libyan Style Okra and Lamb Stew (Bamia Bil-Djaj)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 lb fresh okra, trimmed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups water
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the minced garlic, ground coriander, ground cumin, ground turmeric, and cayenne pepper. Cook for 2 minutes until fragrant.
  4. Add the diced tomatoes, tomato paste, and water to the pot. Season with salt and pepper. Bring to a simmer.
  5. Add the trimmed okra to the pot and gently stir to combine with the lamb and tomato mixture.
  6. Cover the pot and let the stew simmer for 45-50 minutes, or until the lamb is tender and the okra is cooked through.
  7. Adjust the seasoning if needed and serve the Bamia Bil-Djaj hot with rice or crusty bread.
