Libyan Style Shakshuka (Bazin Bil-Tomato)
Bazin Bil-Tomato, also known as Libyan Style Shakshuka, is a popular dish in Libyan cuisine. It is a flavorful and hearty tomato and egg dish that is perfect for breakfast, brunch, or even dinner.
Ingredients
- 4 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- 4-6 eggs
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground cumin, paprika, and cayenne pepper, and cook for another 2 minutes.
- Pour in the diced tomatoes with their juices and season with salt and pepper. Simmer for 10 minutes.
- Using a spoon, make small wells in the tomato mixture and crack an egg into each well.
- Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
- Sprinkle with chopped parsley and serve hot.
