Libyan Style Shakshuka (Bazin Bil-Tomato)

Ingredients

  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • 4-6 eggs
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, paprika, and cayenne pepper, and cook for another 2 minutes.
  4. Pour in the diced tomatoes with their juices and season with salt and pepper. Simmer for 10 minutes.
  5. Using a spoon, make small wells in the tomato mixture and crack an egg into each well.
  6. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  7. Sprinkle with chopped parsley and serve hot.
