Liechtensteiner Cheese Fondue (Liechtensteiner Käsefondue)

Ingredients

  • 1 garlic clove, halved
  • 1 1/2 cups dry white wine
  • 1 tablespoon lemon juice
  • 1/2 pound Emmental cheese, shredded
  • 1/2 pound Gruyère cheese, shredded
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 1 French baguette, cut into bite-sized pieces

Instructions

  1. Rub the inside of a fondue pot with the cut sides of the garlic clove.
  2. Pour the wine and lemon juice into the pot and heat over medium heat until it begins to simmer.
  3. In a separate bowl, toss the shredded cheeses with the flour until well coated.
  4. Gradually add the cheese mixture to the simmering wine, stirring constantly until the cheese is melted and the mixture is smooth.
  5. Stir in the nutmeg.
  6. Place the fondue pot over a fondue burner and serve with the French baguette pieces for dipping.
