Ingredients
- 1 pre-made pie crust
- 3 large leeks, white and light green parts only, sliced

- 3 eggs
- 1 cup heavy cream

Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a tart pan and press it firmly into the bottom and sides. Trim any excess crust from the edges.
- In a large skillet, melt the butter over medium heat. Add the sliced leeks and cook until they are soft, about 5-7 minutes. Season with salt and pepper.
- Sprinkle half of the grated Gruyère cheese over the bottom of the pie crust.
- In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
- Spread the cooked leeks over the cheese in the pie crust.
- Pour the egg and cream mixture over the leeks in the pie crust.
- Sprinkle the remaining Gruyère cheese on top.
- Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.
- Allow the tart to cool for a few minutes before slicing and serving.
