Ligurian Lemon Chicken

Ligurian Lemon Chicken is a classic dish from the Liguria region of Italy, known for its fresh and vibrant flavors. This recipe combines tender chicken with the bright zest of lemons, creating a delightful and aromatic dish that is perfect for any occasion.

Ligurian Lemon Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons capers
  • Salt and pepper to taste

Instructions

  1. Dredge the chicken breasts in flour, shaking off any excess.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  3. Lower the heat to medium and add the minced garlic to the skillet. Cook for 1-2 minutes until fragrant.
  4. Pour in the chicken broth, lemon juice, and lemon zest. Stir to combine, scraping up any browned bits from the bottom of the skillet.
  5. Return the chicken to the skillet and add the capers. Simmer for 5-7 minutes until the chicken is cooked through and the sauce has slightly thickened.
  6. Season with salt and pepper to taste. Serve the chicken with the lemon-caper sauce spooned over the top.
