Ligurian Style Stuffed Emu (Emù Ripieno)

Ingredients

  • 1 whole emu, deboned
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix the breadcrumbs, Parmesan cheese, parsley, garlic, and olive oil to make the stuffing.
  3. Lay the deboned emu flat and spread the stuffing evenly over the meat.
  4. Roll the emu tightly and secure with kitchen twine.
  5. Season the outside of the emu with salt and pepper.
  6. Place the emu in a roasting pan and roast in the oven for 2 hours, or until the internal temperature reaches 160°F.
  7. Let the emu rest for 10 minutes before slicing and serving.
