Ligurian Style Stuffed Emu (Emù Ripieno)
Emù Ripieno is a traditional dish from the Ligurian cuisine, known for its flavorful stuffing and tender emu meat. This recipe is a unique and delicious way to experience the flavors of Liguria.
Ingredients
- 1 whole emu, deboned
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- In a bowl, mix the breadcrumbs, Parmesan cheese, parsley, garlic, and olive oil to make the stuffing.
- Lay the deboned emu flat and spread the stuffing evenly over the meat.
- Roll the emu tightly and secure with kitchen twine.
- Season the outside of the emu with salt and pepper.
- Place the emu in a roasting pan and roast in the oven for 2 hours, or until the internal temperature reaches 160°F.
- Let the emu rest for 10 minutes before slicing and serving.
