Ingredients
- 4 large potatoes, peeled and diced
- 2 leeks, white and light green parts only, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- In a large pot, sauté the leeks, onion, and garlic until softened.
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve the soup hot, garnished with chopped chives.
