Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 slices bacon, chopped
  • 4 large potatoes, peeled and diced
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  3. Add the diced potatoes, chicken or vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. Remove the bay leaf from the pot. Use an immersion blender to blend the soup until smooth, or transfer the soup in batches to a blender and blend until smooth. Season with salt and pepper to taste.
  5. Serve the soup hot, garnished with the crispy bacon pieces and chopped fresh parsley.
