Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 slices bacon, chopped
- 4 large potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Add the diced potatoes, chicken or vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
- Remove the bay leaf from the pot. Use an immersion blender to blend the soup until smooth, or transfer the soup in batches to a blender and blend until smooth. Season with salt and pepper to taste.
- Serve the soup hot, garnished with the crispy bacon pieces and chopped fresh parsley.
