Ingredients

  • 1 kg potatoes, peeled and diced
  • 200g bacon, diced
  • 2 onions, finely chopped
  • 100ml milk
  • 50g butter
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
  2. In a separate pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside, leaving the bacon fat in the pan.
  3. Add the chopped onions to the bacon fat and cook until soft and golden brown.
  4. Mash the cooked potatoes with the milk and butter until smooth and creamy. Season with salt and pepper to taste.
  5. Stir in the cooked bacon and onions, reserving some for garnish.
