Ingredients
- 1 kg potatoes, peeled and diced
- 200g bacon, diced
- 2 onions, finely chopped
- 100ml milk
- 50g butter
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to the pot.
- In a separate pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside, leaving the bacon fat in the pan.
- Add the chopped onions to the bacon fat and cook until soft and golden brown.
- Mash the cooked potatoes with the milk and butter until smooth and creamy. Season with salt and pepper to taste.
- Stir in the cooked bacon and onions, reserving some for garnish.
- Serve the Limburgse Aardappelpuree met Spek en Uien hot, garnished with the remaining bacon and onions.
