Ingredients
- 1 lb (450g) white asparagus, peeled and chopped
- 4 cups (1 liter) vegetable broth
- 1 cup (240ml) heavy cream
- 2 tablespoons (30g) butter
- 2 tablespoons (20g) all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Stir in the flour to create a roux, cooking for 2-3 minutes until golden.
- Gradually whisk in the vegetable broth until smooth.
- Add the chopped asparagus and bring the soup to a simmer. Cook for 15-20 minutes until the asparagus is tender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 5 minutes, then remove from heat.
- Using an immersion blender, puree the soup until smooth.
- Serve hot, garnished with a drizzle of cream or chopped fresh herbs if desired.
