Ingredients

  • 1 cup (240ml) heavy cream
  • 2 tablespoons (30g) butter
  • 2 tablespoons (20g) all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Stir in the flour to create a roux, cooking for 2-3 minutes until golden.
  3. Gradually whisk in the vegetable broth until smooth.
  4. Add the chopped asparagus and bring the soup to a simmer. Cook for 15-20 minutes until the asparagus is tender.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Simmer for an additional 5 minutes, then remove from heat.
  7. Using an immersion blender, puree the soup until smooth.
  8. Serve hot, garnished with a drizzle of cream or chopped fresh herbs if desired.
