Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 4 cups fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon almond extract

Instructions

  1. In a food processor, combine the flour, cold butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Press two-thirds of the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom.
  3. In a bowl, mix the cherries, sugar, cornstarch, and almond extract. Pour the cherry mixture into the crust.
  4. Sprinkle the remaining flour mixture over the cherries.
  5. Bake the tart in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the crust is golden and the filling is bubbly.
  6. Allow the tart to cool before serving.
