Ingredients

  • 500g potatoes, peeled and diced
  • 200g all-purpose flour
  • Pinch of salt
  • 12 plums, pitted
  • 100g breadcrumbs
  • 50g sugar
  • 1 tsp ground cinnamon
  • 50g vegan butter

Instructions

  1. Boil the potatoes until tender, then mash them and let cool.
  2. Combine the mashed potatoes, flour, and salt to form a dough.
  3. Divide the dough into 12 equal pieces and flatten each piece into a small disc.
  4. Place a plum in the center of each disc and wrap the dough around it, forming a smooth ball.
  5. Bring a large pot of water to a boil and carefully drop the dumplings in.
  6. Cook for about 15-20 minutes or until the dumplings float to the surface.
  7. In a separate pan, melt the vegan butter and add the breadcrumbs, sugar, and cinnamon. Cook until golden brown.
  8. Roll the cooked dumplings in the breadcrumb mixture until coated.
  9. Serve the Limburgse Pruimenknoedels warm and enjoy!
