  • 500ml beef broth
  • 500ml dark beer (such as a Belgian dubbel or stout)
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large Dutch oven, heat the vegetable oil over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in batches. Set aside.
  3. Add the onions, carrots, and celery to the pot and cook until softened.
  4. Add the minced garlic and cook for another minute.
  5. Sprinkle the flour over the vegetables and stir to coat.
  6. Pour in the beef broth and beer, and add the bay leaves and thyme.
