Ingredients
- 1.5 kg beef chuck, cut into cubes
- 3 onions, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 500ml beef broth
- 500ml dark beer (such as a Belgian dubbel or stout)
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large Dutch oven, heat the vegetable oil over medium-high heat.
- Season the beef cubes with salt and pepper, then brown them in batches. Set aside.
- Add the onions, carrots, and celery to the pot and cook until softened.
- Add the minced garlic and cook for another minute.
- Sprinkle the flour over the vegetables and stir to coat.
- Pour in the beef broth and beer, and add the bay leaves and thyme.
- Return the browned beef to the pot and bring the stew to a simmer.
- Cover and let it simmer for 2.5 to 3 hours, until the beef is tender.
- Season with additional salt and pepper if needed, then serve hot.
