Ingredients
- 1.5 kg pork shoulder, cut into chunks
- 2 onions, chopped
- 3 cloves of garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 tbsp all-purpose flour
- 500ml chicken broth
- 250ml Limburgian beer
- 3 tbsp whole grain mustard
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the pork chunks with salt and pepper.
- Heat some oil in a large Dutch oven over medium-high heat. Brown the pork chunks in batches and set aside.
- Add the onions, garlic, carrots, and celery to the Dutch oven. Cook until the vegetables are softened.
- Sprinkle the flour over the vegetables and cook for 1-2 minutes.
- Pour in the chicken broth and beer, and stir to combine.
- Return the pork chunks to the pot. Add the mustard and bay leaves. Bring the stew to a simmer.
- Cover and let the stew simmer for 1.5-2 hours, or until the pork is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Limburgse Varkensstoofpot met Mosterd hot, with crusty bread or boiled potatoes.
