Ingredients

  • 1.5 kg pork shoulder, cut into chunks
  • 2 onions, chopped
  • 3 cloves of garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 tbsp all-purpose flour
  • 500ml chicken broth
  • 250ml Limburgian beer
  • 3 tbsp whole grain mustard
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the pork chunks with salt and pepper.
  2. Heat some oil in a large Dutch oven over medium-high heat. Brown the pork chunks in batches and set aside.
  3. Add the onions, garlic, carrots, and celery to the Dutch oven. Cook until the vegetables are softened.
  4. Sprinkle the flour over the vegetables and cook for 1-2 minutes.
  5. Pour in the chicken broth and beer, and stir to combine.
  6. Return the pork chunks to the pot. Add the mustard and bay leaves. Bring the stew to a simmer.
  7. Cover and let the stew simmer for 1.5-2 hours, or until the pork is tender.
  8. Adjust the seasoning with salt and pepper, if needed.
