Ingredients
- 1 kg mixed game meat, such as venison, wild boar, and rabbit
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 500ml red wine
- 500ml beef or game stock
- 2 tbsp flour
- 4 tbsp butter
- 2 bay leaves
- 4 sprigs of thyme
- Salt and pepper to taste
Instructions
- Season the game meat with salt and pepper, then coat with flour.
- In a large Dutch oven, melt the butter over medium heat. Brown the meat in batches and set aside.
- Add the onions, garlic, carrots, and celery to the pot. Cook until the vegetables are softened.
- Pour in the red wine and stock, then return the meat to the pot. Add the bay leaves and thyme.
- Bring the stew to a simmer, then cover and cook over low heat for 2 hours, stirring occasionally.
- Adjust the seasoning with salt and pepper before serving.
