Ingredients

  • 500g Limburgian sausage, sliced
  • 500g sauerkraut, drained
  • 2 large potatoes, peeled and thinly sliced
  • 1 onion, chopped
  • 200ml chicken or vegetable broth
  • 2 tbsp butter
  • 1/2 tsp caraway seeds
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, cook the sliced sausage over medium heat until browned. Remove from the skillet and set aside.
  3. In the same skillet, sauté the chopped onion in butter until translucent.
  4. Add the sauerkraut, caraway seeds, and broth to the skillet. Cook for 5 minutes, then remove from heat.
  5. Layer half of the sliced potatoes in the bottom of a greased casserole dish. Season with salt and pepper.
  6. Spread the sauerkraut mixture over the potatoes, then layer the cooked sausage on top.
  7. Arrange the remaining sliced potatoes over the sausage. Season with salt and pepper.
  8. Cover the casserole dish with foil and bake in the preheated oven for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the potatoes are golden brown.
  10. Serve hot and enjoy!
