Lip-smacking Hirekai Palya Masala Dosa (Ridge Gourd Stir-Fry Masala Crepe)
Ridge Gourd Stir-Fry Masala Crepe, also known as Hirekai Palya Masala Dosa, is a popular dish from the Uttara Karnataka Cuisine. This flavorful and spicy crepe is filled with a delicious ridge gourd stir-fry, making it a perfect breakfast or snack option.
Ingredients
- 2 cups rice flour
- 1/2 cup urad dal (black gram lentils)
- 1/4 teaspoon fenugreek seeds
- 2 cups water
- Salt to taste
- 2 large ridge gourds, peeled and chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 tablespoon vegetable oil
- Fresh coriander leaves for garnish
Instructions
- In a bowl, mix rice flour, urad dal, fenugreek seeds, and water. Let it ferment for 6-8 hours.
- After fermentation, add salt to the batter and mix well to make a smooth batter.
- Heat a non-stick pan and pour a ladleful of batter. Spread it in a circular motion to make a thin crepe. Cook until golden brown and crispy. Repeat with the remaining batter to make crepes.
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, chopped onion, and green chilies. Sauté until the onions turn translucent.
- Add chopped ridge gourd, turmeric powder, red chili powder, and salt. Stir well and cook until the ridge gourd is tender.
- Place a spoonful of the ridge gourd stir-fry in the center of each crepe. Fold the crepe and serve hot, garnished with fresh coriander leaves.
