Lip-smacking Hirekai Palya Masala Dosa (Ridge Gourd Stir-Fry Masala Crepe)

Ingredients

  • 2 cups rice flour
  • 1/2 cup urad dal (black gram lentils)
  • 1/4 teaspoon fenugreek seeds
  • 2 cups water
  • Salt to taste
  • 2 large ridge gourds, peeled and chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon vegetable oil
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, mix rice flour, urad dal, fenugreek seeds, and water. Let it ferment for 6-8 hours.
  2. After fermentation, add salt to the batter and mix well to make a smooth batter.
  3. Heat a non-stick pan and pour a ladleful of batter. Spread it in a circular motion to make a thin crepe. Cook until golden brown and crispy. Repeat with the remaining batter to make crepes.
  4. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, chopped onion, and green chilies. Sauté until the onions turn translucent.
  5. Add chopped ridge gourd, turmeric powder, red chili powder, and salt. Stir well and cook until the ridge gourd is tender.
  6. Place a spoonful of the ridge gourd stir-fry in the center of each crepe. Fold the crepe and serve hot, garnished with fresh coriander leaves.
