Lip-smacking Hirekai Palya (Ridge Gourd Stir-Fry)
Ridge Gourd Stir-Fry, also known as Hirekai Palya, is a popular dish from the Uttara Karnataka Cuisine. This simple and flavorful stir-fry is a staple in many households and is packed with the goodness of ridge gourd.
Ingredients
- 2 medium-sized ridge gourds, peeled and chopped
- 1 onion, finely chopped
- 2-3 green chilies, slit
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp cooking oil
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and sauté for a few seconds.
- Add chopped onions and green chilies. Sauté until the onions turn translucent.
- Add the chopped ridge gourd, turmeric powder, red chili powder, and salt. Mix well.
- Cover and cook on medium heat for 10-12 minutes, stirring occasionally, until the ridge gourd is tender.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
