Lip-smacking Hirekai Palya (Ridge Gourd Stir-Fry)

Ingredients

  • 2 medium-sized ridge gourds, peeled and chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, slit
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp cooking oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and sauté for a few seconds.
  2. Add chopped onions and green chilies. Sauté until the onions turn translucent.
  3. Add the chopped ridge gourd, turmeric powder, red chili powder, and salt. Mix well.
  4. Cover and cook on medium heat for 10-12 minutes, stirring occasionally, until the ridge gourd is tender.
  5. Garnish with fresh coriander leaves and serve hot with roti or rice.
