Lithuanian Caraway Cheese (Lietuviškas kmynų sūris)

Ingredients

  • 1 gallon whole milk
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 2 tablespoons caraway seeds

Instructions

  1. Pour the milk into a large pot and heat it over medium heat until it reaches 185°F, stirring occasionally to prevent scorching.
  2. Remove the pot from the heat and gently stir in the white vinegar. Let the mixture sit for 10 minutes to allow the curds to form.
  3. Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander, allowing the whey to drain away.
  4. Gather the corners of the cheesecloth and tie them together to form a pouch. Hang the pouch over the bowl and let it drain for 1 hour.
  5. After draining, transfer the cheese to a mixing bowl and stir in the salt and caraway seeds until well combined.
  6. Shape the cheese into a round disk and refrigerate for at least 2 hours before serving.
