Lithuanian Cheese Tart (Lietuviška sūrio pyragėlė)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 1 pound cottage cheese
  • 3 eggs
  • 1/2 cup sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, combine the flour and cold cubed butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.
  2. Add the cold water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. In a separate bowl, mix the cottage cheese, eggs, sugar, sour cream, vanilla extract, and salt until smooth.
  5. Roll out the chilled dough on a floured surface and transfer it to a tart pan. Pour the cheese filling into the crust.
