Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup cold water
- 1 pound cottage cheese
- 3 eggs
- 1/2 cup sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large bowl, combine the flour and cold cubed butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.
- Add the cold water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C).
- In a separate bowl, mix the cottage cheese, eggs, sugar, sour cream, vanilla extract, and salt until smooth.
- Roll out the chilled dough on a floured surface and transfer it to a tart pan. Pour the cheese filling into the crust.
- Bake for 40 minutes, or until the filling is set and the crust is golden brown.
