Lithuanian Cherry Cake (Lietuviškas vyšnių pyragas)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups fresh cherries, pitted
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch (23cm) round cake pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  4. In a small bowl, beat the egg and vanilla extract together. Pour the egg mixture into the flour mixture and stir until the dough comes together.
  5. Press two-thirds of the dough into the bottom and up the sides of the prepared cake pan to form the crust.
  6. Arrange the pitted cherries over the crust.
  7. Crumble the remaining dough over the cherries.
  8. Bake for 40-45 minutes, or until the crust is golden brown.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Dust the top of the cake with powdered sugar before serving.
