Lithuanian Cherry Cake (Lietuviškas vyšnių pyragas)

Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups fresh cherries, pitted
- 1/4 cup powdered sugar, for dusting
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9-inch (23cm) round cake pan.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the cold butter to the flour mixture and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
- In a small bowl, beat the egg and vanilla extract together. Pour the egg mixture into the flour mixture and stir until the dough comes together.
- Press two-thirds of the dough into the bottom and up the sides of the prepared cake pan to form the crust.
- Arrange the pitted cherries over the crust.
- Crumble the remaining dough over the cherries.
- Bake for 40-45 minutes, or until the crust is golden brown.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Dust the top of the cake with powdered sugar before serving.
