Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 8-10 fresh plums, pitted and sliced
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt; gradually stir into the creamed mixture alternately with the milk.
  5. Spread the batter into the prepared pan. Arrange the plum slices on top of the batter.
  6. In a small bowl, mix together the brown sugar and cinnamon; sprinkle over the plums.
  7. Bake for 40-45 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool in the pan on a wire rack. Serve warm or at room temperature.
