Ingredients

  • 6 large potatoes, peeled and grated
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 lb ground pork
  • 1/2 lb ground beef
  • 1 onion, finely chopped
  • 1/2 cup dried mushrooms, rehydrated and chopped
  • 2 cups beef or vegetable broth
  • 1/2 cup sour cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the grated potatoes with flour and salt to form a dough.
  2. Divide the dough into 8 equal portions and flatten each portion into a disk.
  3. Combine the ground pork, ground beef, and chopped onion. Season with salt and pepper.
  4. Place a portion of the meat mixture in the center of each potato disk and shape it into a dumpling.
  5. Bring a large pot of salted water to a boil and carefully add the dumplings. Cook for 30-40 minutes or until they float to the surface.
  6. In a saucepan, melt the butter and sauté the rehydrated mushrooms until golden brown.
  7. Pour in the beef or vegetable broth and simmer for 10 minutes.
  8. Stir in the sour cream and season with salt and pepper.
  9. Serve the cepelinai with the mushroom sauce on top.
