Ingredients

  • 3 potatoes, diced
  • 1 carrot, diced
  • 1 bay leaf
  • 1 liter vegetable broth
  • 2 tablespoons flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Sprinkle the flour over the onion and garlic, and stir to combine.
  4. Add the mushrooms, potatoes, and carrots to the pot, and stir to coat with the flour mixture.
  5. Pour in the vegetable broth and add the bay leaf. Bring the stew to a simmer.
  6. Cover the pot and let the stew cook for 30-40 minutes, or until the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Remove the bay leaf before serving.
