Liwet Rice Extravaganza, also known as Nasi Liwet Extravaganza, is a traditional Javanese dish that is rich in flavor and aroma. This dish is a delightful combination of savory rice, tender chicken, aromatic herbs, and a variety of flavorful toppings. It's perfect for a special occasion or a cozy family dinner.
Ingredients
- 2 cups jasmine rice
- 4 cups water
- 1 lb chicken thighs, cut into pieces
- 1 can coconut milk
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 2 bay leaves
- 2 lemongrass stalks, bruised
- 1 inch galangal, sliced
- 1 tsp salt
- 1/2 tsp sugar
- 4 hard-boiled eggs, peeled
- 4 fried tofu pieces
- 4 cups water spinach (kangkung) or spinach
- 2 cups bean sprouts
- 2 red chilies, sliced
- 2 green chilies, sliced
- 4 lime wedges
Instructions
- Rinse the jasmine rice and drain well.
- In a large pot, combine the rice, water, chicken pieces, coconut milk, garlic, shallots, bay leaves, lemongrass, galangal, salt, and sugar.
- Cook over medium heat, stirring occasionally, until the rice is tender and the chicken is cooked through, about 45-50 minutes.
- While the rice is cooking, blanch the water spinach and bean sprouts in boiling water for 1-2 minutes, then drain.
- Once the rice is cooked, remove the bay leaves and lemongrass. Fluff the rice with a fork.
- To serve, place a portion of rice and chicken in a bowl. Arrange the blanched vegetables, hard-boiled eggs, fried tofu, and sliced chilies on top. Serve with a lime wedge.
