Llandeilo Lemon Drizzle Cake

Ingredients

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 3 large eggs
  • 200g self-raising flour
  • Zest of 2 lemons
  • 4 tbsp lemon juice
  • 100g granulated sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a 20cm (8-inch) round cake tin.
  2. In a large bowl, cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then fold in the flour and lemon zest.
  4. Pour the batter into the prepared cake tin and bake for 30-35 minutes, or until a skewer inserted into the center comes out clean.
  5. While the cake is baking, mix the lemon juice and granulated sugar to make the drizzle.
  6. Once the cake is out of the oven, prick it all over with a skewer and pour the drizzle over the top, allowing it to soak in.
  7. Leave the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
