Llandeilo Lemon Drizzle Cake

Ingredients
- 200g unsalted butter, softened
- 200g caster sugar
- 3 large eggs
- 200g self-raising flour
- Zest of 2 lemons
- 4 tbsp lemon juice
- 100g granulated sugar
Instructions
- Preheat the oven to 180°C (350°F) and grease a 20cm (8-inch) round cake tin.
- In a large bowl, cream together the butter and caster sugar until light and fluffy.
- Beat in the eggs, one at a time, then fold in the flour and lemon zest.
- Pour the batter into the prepared cake tin and bake for 30-35 minutes, or until a skewer inserted into the center comes out clean.
- While the cake is baking, mix the lemon juice and granulated sugar to make the drizzle.
- Once the cake is out of the oven, prick it all over with a skewer and pour the drizzle over the top, allowing it to soak in.
- Leave the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
