Llandovery Lavender Crème Brûlée

Ingredients
- 1 1/2 cups heavy cream
- 1/2 cup whole milk
- 2 tablespoons dried Llandovery lavender
- 1/2 vanilla bean, split lengthwise
- 6 large egg yolks
- 1/2 cup granulated sugar
- Extra granulated sugar for caramelizing
Instructions
- In a saucepan, combine the heavy cream, whole milk, dried Llandovery lavender, and the split vanilla bean. Heat over medium heat until it just begins to simmer. Remove from heat and let the mixture infuse for 15 minutes.
- Preheat the oven to 325°F (165°C). Place 4 ramekins in a baking dish.
- In a bowl, whisk together the egg yolks and granulated sugar until well combined.
- Strain the infused cream mixture to remove the lavender and vanilla bean. Gradually whisk the cream mixture into the egg yolk mixture.
- Pour the custard mixture into the ramekins. Carefully pour hot water into the baking dish to reach halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the custards are set but still slightly wobbly in the center. Remove from the water bath and let cool. Refrigerate for at least 2 hours or overnight.
- Before serving, sprinkle a thin, even layer of granulated sugar on top of each custard. Use a kitchen torch to caramelize the sugar until golden and bubbly.
- Let the crème brûlée sit for a few minutes to allow the caramelized sugar to harden. Serve and enjoy!
