Ingredients
- 500g diced lamb
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 2 tbsp flour
- 500ml lamb or vegetable stock
- 2 tbsp fresh mint, chopped
- Salt and pepper to taste
- 500g puff pastry
Instructions
- Preheat the oven to 180°C (350°F).
- In a large pot, brown the diced lamb over medium heat.
- Add the chopped onion, diced carrots, and cubed potatoes to the pot and cook for 5 minutes.
- Sprinkle the flour over the lamb and vegetables, stirring to coat evenly.
- Pour in the lamb or vegetable stock and bring to a simmer, stirring constantly until the sauce thickens.
- Stir in the chopped mint, salt, and pepper. Remove from heat and let the filling cool.
- Roll out the puff pastry and line a pie dish with the pastry, trimming any excess.
- Pour the cooled lamb and vegetable filling into the pastry-lined dish.
- Place another layer of pastry on top, crimping the edges to seal the pie.
- Make a few slits in the pastry to allow steam to escape during baking.
- Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown.
