Ingredients

  • 500g diced lamb
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 2 tbsp flour
  • 500ml lamb or vegetable stock
  • 2 tbsp fresh mint, chopped
  • Salt and pepper to taste
  • 500g puff pastry

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, brown the diced lamb over medium heat.
  3. Add the chopped onion, diced carrots, and cubed potatoes to the pot and cook for 5 minutes.
  4. Sprinkle the flour over the lamb and vegetables, stirring to coat evenly.
  5. Pour in the lamb or vegetable stock and bring to a simmer, stirring constantly until the sauce thickens.
  6. Stir in the chopped mint, salt, and pepper. Remove from heat and let the filling cool.
  7. Roll out the puff pastry and line a pie dish with the pastry, trimming any excess.
  8. Pour the cooled lamb and vegetable filling into the pastry-lined dish.
  9. Place another layer of pastry on top, crimping the edges to seal the pie.
  10. Make a few slits in the pastry to allow steam to escape during baking.
  11. Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown.
