Llanelli Lamb Curry
Llanelli Lamb Curry is a traditional dish from the Carmarthenshire region of Wales, known for its rich flavors and aromatic spices. This hearty curry is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 1 cup coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 cinnamon stick
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the curry powder, turmeric, cumin, and coriander. Cook for 2 minutes to toast the spices.
- Add the diced tomatoes, coconut milk, and cinnamon stick. Season with salt and pepper. Cover and simmer for 45 minutes.
- Add the cubed potatoes to the pot and continue to simmer for an additional 15 minutes, or until the lamb is tender and the potatoes are cooked through.
- Remove the cinnamon stick and discard. Serve the Llanelli Lamb Curry hot, garnished with fresh cilantro.
