Ingredients

  • 1 whole chicken, about 4 lbs
  • 2 lemons, sliced
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken and pat dry with paper towels.
  3. Season the cavity of the chicken with salt and pepper, then stuff it with the sliced lemons, garlic, and thyme.
