Llanon Lemon Drizzle Cake

Ingredients

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 3 large eggs
  • 200g self-raising flour
  • Zest of 2 lemons
  • 4 tbsp lemon juice
  • 100g granulated sugar

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a loaf tin.
  2. In a large bowl, cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then fold in the flour and lemon zest.
  4. Pour the batter into the prepared tin and bake for 40-45 minutes, or until a skewer inserted into the center comes out clean.
  5. While the cake is still warm, mix the lemon juice and granulated sugar to make the drizzle. Prick the warm cake all over with a fork and pour over the drizzle.
  6. Allow the cake to cool in the tin before removing and serving.
