Llanon Lemon Drizzle Cake
This Llanon Lemon Drizzle Cake is a delightful treat that hails from the beautiful region of Ceredigion. The zesty lemon flavor combined with the sweet drizzle makes it a perfect accompaniment to a cup of tea or coffee.
Ingredients
- 200g unsalted butter, softened
- 200g caster sugar
- 3 large eggs
- 200g self-raising flour
- Zest of 2 lemons
- 4 tbsp lemon juice
- 100g granulated sugar
Instructions
- Preheat the oven to 180°C (350°F) and grease a loaf tin.
- In a large bowl, cream together the butter and caster sugar until light and fluffy.
- Beat in the eggs, one at a time, then fold in the flour and lemon zest.
- Pour the batter into the prepared tin and bake for 40-45 minutes, or until a skewer inserted into the center comes out clean.
- While the cake is still warm, mix the lemon juice and granulated sugar to make the drizzle. Prick the warm cake all over with a fork and pour over the drizzle.
- Allow the cake to cool in the tin before removing and serving.
