Ingredients
- 1 cup Arborio rice
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon saffron threads
- 4 cups seafood or chicken broth
- 1/2 pound mussels, cleaned and debearded
- 1/2 pound clams, cleaned
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound squid, sliced into rings
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving
Instructions
- In a paella pan or large skillet, heat olive oil over medium heat.
- Add the onion and garlic, sauté until softened.
- Stir in the red bell pepper and cherry tomatoes, cook for 5 minutes.
- Add the saffron threads and Arborio rice, stir to coat the rice with the oil and saffron.
- Pour in the seafood or chicken broth, bring to a simmer and cook for 15 minutes.
- Add the mussels, clams, shrimp, and squid on top of the rice, cover and cook for an additional 10 minutes.
