Llansteffan Seafood Paella

Ingredients

  • 1 cup Arborio rice
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon saffron threads
  • 4 cups seafood or chicken broth
  • 1/2 pound mussels, cleaned and debearded
  • 1/2 pound clams, cleaned
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound squid, sliced into rings
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. In a paella pan or large skillet, heat olive oil over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Stir in the red bell pepper and cherry tomatoes, cook for 5 minutes.
  4. Add the saffron threads and Arborio rice, stir to coat the rice with the oil and saffron.
  5. Pour in the seafood or chicken broth, bring to a simmer and cook for 15 minutes.
  6. Add the mussels, clams, shrimp, and squid on top of the rice, cover and cook for an additional 10 minutes.
