Llanybydder Lamb And Apricot Tagine

Ingredients

  • 1.5 lbs lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 1/2 cup dried apricots
  • 2 cups chicken broth
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large tagine or Dutch oven, heat the olive oil over medium heat.
  2. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Stir in the cumin, coriander, cinnamon, ginger, and cayenne pepper, and cook for 1 minute.
  5. Return the lamb to the pot and add the dried apricots, chicken broth, and honey.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender.
  7. Season with salt and pepper to taste.
  8. Serve the tagine hot, garnished with fresh cilantro.
