Llanybydder Lamb And Mint Sausage Rolls

Ingredients

  • 500g ground lamb
  • 1/4 cup fresh mint, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 sheets puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix the ground lamb, fresh mint, salt, black pepper, and nutmeg until well combined.
  3. Roll out the puff pastry sheets and cut each into 6 equal rectangles.
  4. Divide the lamb mixture into 12 portions and shape each portion into a sausage shape.
  5. Place a portion of the lamb mixture onto each pastry rectangle and roll up to encase the filling, sealing the edges with a little water.
  6. Brush the sausage rolls with the beaten egg and place them on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 20-25 minutes or until the pastry is golden and the lamb is cooked through.
  8. Remove from the oven and let cool slightly before serving.
