Ingredients
- 4 large leeks, sliced
- 3 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- In a large pot, melt the butter over medium heat. Add the leeks, onion, and garlic. Cook until softened, about 5 minutes.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Serve hot, garnished with a swirl of cream and a sprinkle of chopped fresh chives.
