Ingredients

  • 4 large leeks, sliced
  • 3 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth

  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. In a large pot, melt the butter over medium heat. Add the leeks, onion, and garlic. Cook until softened, about 5 minutes.
