Lobio Love (ლობიო)

Ingredients

  • 2 cups red kidney beans, soaked overnight
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 tbsp tomato paste
  • 1 tsp ground coriander
  • 1 tsp ground fenugreek
  • 1 tsp hot paprika
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Drain the soaked kidney beans and place them in a large pot. Cover with water and bring to a boil. Reduce heat and simmer for 45 minutes to 1 hour, or until the beans are tender.
  2. In a separate pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the diced tomatoes, tomato paste, ground coriander, fenugreek, hot paprika, bay leaf, salt, and black pepper to the pan. Cook for 5-7 minutes, stirring occasionally.
  4. Once the beans are tender, add the tomato mixture to the pot of beans. Stir to combine and simmer for an additional 10-15 minutes to allow the flavors to meld.
  5. Adjust seasoning if needed and serve the Lobio hot, garnished with fresh parsley.
