Ingredients
- 2 cups red kidney beans, soaked overnight
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 tbsp tomato paste
- 1 tsp ground coriander
- 1 tsp ground fenugreek
- 1 tsp hot paprika
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Drain the soaked kidney beans and place them in a large pot. Cover with water and bring to a boil. Reduce heat and simmer for 45 minutes to 1 hour, or until the beans are tender.
- In a separate pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced tomatoes, tomato paste, ground coriander, fenugreek, hot paprika, bay leaf, salt, and black pepper to the pan. Cook for 5-7 minutes, stirring occasionally.
- Once the beans are tender, add the tomato mixture to the pot of beans. Stir to combine and simmer for an additional 10-15 minutes to allow the flavors to meld.
- Adjust seasoning if needed and serve the Lobio hot, garnished with fresh parsley.
