Lobio (roasted Red Pepper And Walnut Dip)

Ingredients

  • 3 large red bell peppers
  • 1 cup walnuts
  • 2 cloves garlic
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Preheat the broiler in your oven. Place the red bell peppers on a baking sheet and broil for 10-15 minutes, turning occasionally, until the skin is charred and blistered.
  2. Transfer the roasted peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes, then peel off the skin and remove the seeds.
  3. In a food processor, combine the roasted peppers, walnuts, garlic, coriander, cumin, paprika, cayenne pepper, and olive oil. Blend until smooth.
