Lobio is a traditional Circassian dish that is popular in the Caucasus region. This flavorful dip is made with roasted red peppers, walnuts, and a blend of spices, creating a rich and creamy texture that is perfect for dipping or spreading on bread.
Ingredients
- 3 large red bell peppers
- 1 cup walnuts
- 2 cloves garlic
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Preheat the broiler in your oven. Place the red bell peppers on a baking sheet and broil for 10-15 minutes, turning occasionally, until the skin is charred and blistered.
- Transfer the roasted peppers to a bowl and cover with plastic wrap. Let them steam for 10 minutes, then peel off the skin and remove the seeds.
- In a food processor, combine the roasted peppers, walnuts, garlic, coriander, cumin, paprika, cayenne pepper, and olive oil. Blend until smooth.
- Season with salt to taste and transfer the dip to a serving bowl.
