Lobsta Piman (szechuan Pepper Lobster)
Lobsta Piman, also known as Szechuan Pepper Lobster, is a delightful fusion of Caribbean and Chinese flavors. This dish features succulent lobster meat infused with the bold and numbing heat of Szechuan peppercorns, creating a unique and unforgettable dining experience.
Ingredients
- 2 lbs lobster tails, shell removed and cut into chunks
- 2 tablespoons Szechuan peppercorns
- 4 scallions, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 teaspoon cornstarch
- 1/2 cup chicken or vegetable broth
- 1 teaspoon sesame oil
- Salt to taste
Instructions
- In a small dry skillet, toast the Szechuan peppercorns over medium heat until fragrant, about 2 minutes. Remove from heat and let cool, then grind into a fine powder using a spice grinder or mortar and pestle.
- In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, and cornstarch. Set aside.
- Heat the vegetable oil in a large wok or skillet over high heat. Add the scallions, garlic, and ginger, and stir-fry for 1 minute.
- Add the lobster chunks and bell peppers to the wok, and stir-fry for 2-3 minutes until the lobster is cooked through.
- Pour in the chicken or vegetable broth, then add the ground Szechuan peppercorns and the soy sauce mixture. Stir well to combine.
- Cook for another 2 minutes, stirring constantly, until the sauce has thickened and coated the lobster and peppers. Drizzle with sesame oil and season with salt to taste.
- Transfer the Lobsta Piman to a serving dish and garnish with additional chopped scallions, if desired.
