Ingredients

  • 2 lbs lobster tails, shell removed and cut into chunks
  • 2 tablespoons Szechuan peppercorns
  • 4 scallions, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 teaspoon cornstarch
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

  1. In a small dry skillet, toast the Szechuan peppercorns over medium heat until fragrant, about 2 minutes. Remove from heat and let cool, then grind into a fine powder using a spice grinder or mortar and pestle.
  2. In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, and cornstarch. Set aside.
  3. Heat the vegetable oil in a large wok or skillet over high heat. Add the scallions, garlic, and ginger, and stir-fry for 1 minute.
  4. Add the lobster chunks and bell peppers to the wok, and stir-fry for 2-3 minutes until the lobster is cooked through.
  5. Pour in the chicken or vegetable broth, then add the ground Szechuan peppercorns and the soy sauce mixture. Stir well to combine.
  6. Cook for another 2 minutes, stirring constantly, until the sauce has thickened and coated the lobster and peppers. Drizzle with sesame oil and season with salt to taste.
  7. Transfer the Lobsta Piman to a serving dish and garnish with additional chopped scallions, if desired.
