Lobster Gratin (lyonnaise-style Gratin De Homard)

Ingredients

  • 2 live lobsters (about 1 1/2 pounds each)
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup Gruyère cheese, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the lobsters in a large pot of salted water for about 8 minutes. Remove from the pot and let them cool.
  3. Once cooled, remove the lobster meat from the shells and chop into bite-sized pieces.
  4. In a saucepan, melt the butter over medium heat. Whisk in the flour to create a roux.
  5. Slowly pour in the milk while whisking constantly to create a smooth sauce. Cook for a few minutes until thickened.
  6. Stir in the Gruyère and half of the Parmesan cheese until melted and smooth. Season with salt and pepper.
  7. Place the lobster meat in a baking dish and pour the cheese sauce over the top.
  8. Sprinkle the remaining Parmesan cheese over the top and bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  9. Remove from the oven, sprinkle with chopped parsley, and serve hot.
