Lobster Stuffed Plantains (tostones De Langosta)

Ingredients

  • 2 ripe plantains
  • 1 lb lobster meat, cooked and chopped
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel the plantains and cut them into 1-inch thick slices.
  3. Heat the olive oil in a skillet over medium heat. Fry the plantain slices until golden brown, about 2 minutes per side. Remove and drain on paper towels.
  4. Using a small glass or cup, gently press down on each fried plantain slice to flatten it into a cup shape.
  5. In a separate skillet, sauté the red bell pepper, red onion, and garlic until softened.
  6. Add the chopped lobster meat, cumin, paprika, salt, and pepper. Cook for 2-3 minutes until the lobster is heated through.
  7. Spoon the lobster mixture into the plantain cups and place them on a baking sheet. Bake for 5-7 minutes until heated through.
  8. Sprinkle with fresh cilantro and serve with lime wedges.
