Ingredients
- 2 ripe plantains
- 1 lb lobster meat, cooked and chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the olive oil in a skillet over medium heat. Fry the plantain slices until golden brown, about 2 minutes per side. Remove and drain on paper towels.
- Using a small glass or cup, gently press down on each fried plantain slice to flatten it into a cup shape.
- In a separate skillet, sauté the red bell pepper, red onion, and garlic until softened.
- Add the chopped lobster meat, cumin, paprika, salt, and pepper. Cook for 2-3 minutes until the lobster is heated through.
- Spoon the lobster mixture into the plantain cups and place them on a baking sheet. Bake for 5-7 minutes until heated through.
- Sprinkle with fresh cilantro and serve with lime wedges.
