Loch Ness Lobster Bisque

Ingredients
- 2 fresh lobsters, cooked and meat removed
- 2 tablespoons unsalted butter
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1/4 cup all-purpose flour
- 4 cups fish stock
- 1 cup heavy cream
- 2 bay leaves
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes to remove the raw flour taste.
- Pour in the fish stock and bring the mixture to a simmer. Add the bay leaves and thyme. Cook for 20 minutes, stirring occasionally.
- Add the lobster meat and heavy cream to the pot. Simmer for an additional 15 minutes.
- Remove the bay leaves and discard. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
- Serve the Loch Ness Lobster Bisque hot, garnished with a sprinkle of fresh thyme leaves.
