Loch Ness Lobster Bisque

Ingredients

  • 2 fresh lobsters, cooked and meat removed
  • 2 tablespoons unsalted butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 4 cups fish stock
  • 1 cup heavy cream
  • 2 bay leaves
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 5 minutes.
  2. Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes to remove the raw flour taste.
  3. Pour in the fish stock and bring the mixture to a simmer. Add the bay leaves and thyme. Cook for 20 minutes, stirring occasionally.
  4. Add the lobster meat and heavy cream to the pot. Simmer for an additional 15 minutes.
  5. Remove the bay leaves and discard. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
  6. Serve the Loch Ness Lobster Bisque hot, garnished with a sprinkle of fresh thyme leaves.
