Locura De Cachapas (cachapa Madness)
Locura de Cachapas, or Cachapa Madness, is a traditional Venezuelan dish made with sweet corn pancakes filled with cheese. It's a delicious and satisfying meal that can be enjoyed for breakfast, lunch, or dinner.
Ingredients
- 4 ears of fresh corn, kernels removed
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup grated mozzarella cheese
- 1/2 cup butter
Instructions
- In a blender, combine the corn kernels, flour, sugar, and salt. Blend until smooth.
- Heat a non-stick skillet over medium heat and melt a small amount of butter.
- Pour a ladleful of the corn mixture into the skillet and spread it out into a circle.
- Cook for 2-3 minutes on each side, until golden brown.
- Sprinkle grated mozzarella cheese on one half of the pancake and fold the other half over the cheese.
- Cook for another minute, until the cheese is melted.
- Repeat with the remaining batter and cheese.
- Serve the cachapas warm.
