Ingredients

  • 4 ears of fresh corn, kernels removed
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 cup grated mozzarella cheese
  • 1/2 cup butter

Instructions

  1. In a blender, combine the corn kernels, flour, sugar, and salt. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  3. Pour a ladleful of the corn mixture into the skillet and spread it out into a circle.
  4. Cook for 2-3 minutes on each side, until golden brown.
  5. Sprinkle grated mozzarella cheese on one half of the pancake and fold the other half over the cheese.
  6. Cook for another minute, until the cheese is melted.
  7. Repeat with the remaining batter and cheese.
  8. Serve the cachapas warm.
