Locura De Mofongo (mofongo Madness)
Mofongo is a traditional Puerto Rican dish made with fried green plantains, garlic, and pork cracklings. This recipe takes the classic mofongo to the next level with a delicious twist, creating a dish we like to call "Locura de Mofongo" or "Mofongo Madness."
Ingredients
- 4 green plantains, peeled and sliced
- 4 cloves garlic, minced
- 1 cup pork cracklings (chicharrones)
- 1/2 cup chicken broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the plantain slices and fry until golden brown, about 5 minutes per side.
- Remove the plantains from the pot and place them in a large mortar.
- Add the minced garlic and pork cracklings to the mortar.
- Using a pestle, mash the ingredients together until well combined.
- Gradually add the chicken broth while continuing to mash until the desired consistency is reached.
- Season with salt and pepper to taste.
- Divide the mofongo mixture into 4 equal portions and shape into balls.
- Serve the mofongo balls on individual plates and enjoy!
