Locura De Mofongo (mofongo Madness)

Mofongo is a traditional Puerto Rican dish made with fried green plantains, garlic, and pork cracklings. This recipe takes the classic mofongo to the next level with a delicious twist, creating a dish we like to call "Locura de Mofongo" or "Mofongo Madness."

Locura De Mofongo (mofongo Madness)

Ingredients

  • 4 green plantains, peeled and sliced
  • 4 cloves garlic, minced
  • 1 cup pork cracklings (chicharrones)
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the plantain slices and fry until golden brown, about 5 minutes per side.
  3. Remove the plantains from the pot and place them in a large mortar.
  4. Add the minced garlic and pork cracklings to the mortar.
  5. Using a pestle, mash the ingredients together until well combined.
  6. Gradually add the chicken broth while continuing to mash until the desired consistency is reached.
  7. Season with salt and pepper to taste.
  8. Divide the mofongo mixture into 4 equal portions and shape into balls.
  9. Serve the mofongo balls on individual plates and enjoy!
