This recipe combines tender chicken, flavorful shiitake mushrooms, and sticky glutinous rice, all steamed to perfection in lotus leaves for a magical dining experience.

Ingredients

  • 500g glutinous rice, soaked for 4 hours
  • 500g chicken thighs, diced
  • 6 dried shiitake mushrooms, rehydrated and sliced
  • 4 Chinese sausages, sliced
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 6 lotus leaves, soaked until pliable

Instructions

  1. Marinate the chicken with oyster sauce, soy sauce, dark soy sauce, sesame oil, sugar, and white pepper for 30 minutes.
  2. Stir-fry the marinated chicken, shiitake mushrooms, and Chinese sausages until the chicken is cooked through.
  3. Drain the soaked glutinous rice and mix it with the cooked chicken mixture.
  4. Divide the mixture into 6 portions and wrap each portion in a lotus leaf, securing with kitchen twine.
  5. Steam the wrapped loh mai kai for 1 hour until the rice is tender and the filling is flavorful.
