Ingredients

  • 500g thick wheat noodles
  • 300g pork belly, sliced
  • 4 hard-boiled eggs, sliced
  • 2 cups bean sprouts
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 4 cups chicken broth
  • 2 tablespoons cornstarch
  • 4 tablespoons water

Instructions

  1. Boil the noodles according to package instructions, then drain and set aside.
  2. In a pot, cook the pork belly slices until browned, then remove and set aside.
  3. Sauté the garlic in the same pot until fragrant, then add the chicken broth, soy sauce, oyster sauce, dark soy sauce, sugar, and white pepper. Bring to a simmer.
  4. In a small bowl, mix the cornstarch and water to make a slurry, then add it to the simmering broth to thicken the gravy.
  5. To serve, divide the noodles among bowls, top with pork slices, sliced eggs, and bean sprouts, then ladle the hot gravy over the noodles.
