Loh Mee (卤面)
卤面 (Loh Mee) is a popular Malaysian Chinese noodle dish that features thick wheat noodles in a savory, aromatic gravy topped with various toppings such as sliced hard-boiled eggs, pork slices, and bean sprouts.
Ingredients
- 500g thick wheat noodles
- 300g pork belly, sliced
- 4 hard-boiled eggs, sliced
- 2 cups bean sprouts
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 4 cups chicken broth
- 2 tablespoons cornstarch
- 4 tablespoons water
Instructions
- Boil the noodles according to package instructions, then drain and set aside.
- In a pot, cook the pork belly slices until browned, then remove and set aside.
- Sauté the garlic in the same pot until fragrant, then add the chicken broth, soy sauce, oyster sauce, dark soy sauce, sugar, and white pepper. Bring to a simmer.
- In a small bowl, mix the cornstarch and water to make a slurry, then add it to the simmering broth to thicken the gravy.
- To serve, divide the noodles among bowls, top with pork slices, sliced eggs, and bean sprouts, then ladle the hot gravy over the noodles.
