Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp granulated sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp rose water
  • 1/4 cup chopped pistachios

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and rose water.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped pistachios.
  4. Heat a non-stick pan or griddle over medium heat and lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Repeat with the remaining batter.
  7. Serve the Lokum Pankek warm, topped with extra chopped pistachios and a drizzle of honey or maple syrup.
