Ingredients
- 3 cups cooked white rice
- 1 cup diced pineapple
- 1/2 cup shredded coconut
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Push the onion and garlic to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Add the cooked rice, diced pineapple, and shredded coconut to the skillet. Stir to combine with the eggs, onion, and garlic.
- Drizzle the soy sauce over the rice mixture and continue to stir-fry for 5-7 minutes, until everything is heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
