Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup coconut cream
  • 1/2 cup sugar
  • 3 eggs
  • 1/4 cup lime juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese, coconut cream, and 1/2 cup sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the lime juice and vanilla extract.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake in the preheated oven for 45 minutes, or until the center is almost set. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
